Chili

Ingredients:

1 lb. Ground Beef

2 15 oz. Cans Beans

1 28 oz. Can Crushed Tomatoes

~2 C. Beef Broth

1/2 8 oz. Can Tomato Paste

2-3 Medium-Sized Chili Peppers

1 Large Onion

3 Cloves Garlic

1 Can Chipotles in Adobo

2 (Dried) Chipotle Peppers


Seasonings (to taste/preference):

Garlic Powder, Chili Powder (as many different kinds as you have but primarily Ancho), Cayenne, Smoked Paprika, Mexican Oregano, Cinnamon, Salt, Bay Leaf


Equipment Needed (or not, you can improvise):

Dutch Oven/Large Pot, Spatula, Can Opener, Knife, Cutting Board, Bowl

Directions:

  1. Brown beef in dutch oven/large pot and remove, but leave rendered fat behind.

  2. Add onion and cook until softened.

    2a. Add garlic and cook until fragrant.

  3. Add tomato paste and spread on bottom of pot, allow to cook up a bit and darken slightly.

    3a. Add spices and crushed tomato and scrape the bottom of the pot.

    3b. Return meat to pot and add beans and chipotles (canned and dried).

  4. Add broth and Bay Leaf, stir, and cover almost completely with lid.

    4a. Allow to simmer until chili darkens in color and liquid has reduced by about 1/3.

  5. Remove dried chipotles and bay leaf. Serve.
